Daikon Cubes


These daikon cubes are great eaten cold so if you're packing lunch, there's no need to heat it up before eating.  

Ingredients

  • 1 cup of cube daikon
  • 1 teaspoon mushroom stock powder
Instructions
  • Skin and cube the daikon.
  • Add daikon to pot and cover with water to about an inch above the cubes.
  • Boil for 30 minutes.  Keep an eye on the water level every now and then to ensure the water doesn't evaporate completely.  Add more water if needed.
  • Daikon is cooked once it's no longer opaque and you can see transparency.
  • Drain daikon cubes.  Leave to cool before keeping.
